Red Velvet Cake

Of course I need to bake a cake! I always say I will try something different but I love baking cakes. And what goes well with the berries in my fridge and my favourite cream cheese frosting? – Yes! A Red Velvet Cake! And yes- another classic one! Because I love classics!

Now for the cake. You need:
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon fine salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 teaspoons red food coloring (or better read the instructions on it)
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
The recipe for my favourite cheese cream frosting you can find in one of my previous post “Fruit Salad On A Cake”.
Now let’s bake… or let’s mix first our ingredients.
Preheat the oven at 180°C.
In a large bowl, sift together the flour, sugar, salt, and cocoa powder. In smaller bowl whisk together the buttermilk and the food colour. If you have no buttermilk you can do it by yourself. Just add a teaspoon of freshly squeezed lemon juice to every cup of regular milk and leave for 10 minutes. In another large bowl, whisk together the oil, eggs and vanilla. When combined add the coloured buttermilk.
Using your mixer, mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed. Now take the vinegar and add the baking soda in it. It will foam. Add it quickly to the batter, incorporate it and quickly in the cake pan and in the oven. It will add extra moisture to your cake. Of course you can bake one cake and cut it into 3 layers or bake them separately. As you like. I baked one for around 45 minutes. But always check with a toothpick. It must go out clean.
And leave cool completely. Meanwhile prepare your cheese cream frosting.
You can make it simple or decorate your cake as you like. I did it with some berries.
