To Kiss The Frog That Turns Into a Beautiful Prince

Just look at these gorgeous! That recipe  makes me think of the story for the frog that once kissed by the princesse turns into a beautiful prince.
Generally I love berries but blueberries are not my favourite ones.
So last time I made berry tiramisu I had a lot of blueberries left and decided to freeze them. And when talking about Sunday breakfast pancakes are one of the first things I think. Then I decided to turn my left blueberries into yummy and if possible low calorie pancakes.
And here we go! For 1 serving you’ll need:
1/3c of rolled ot quick oats
1/3c of cottage cheese
1 egg and 1 egg white
1/2t of baking soda
1/4t of vanilla
1/4t of cinnamon
pinch of salt
1/3c of blueberries
1t honey
1t of syrup
Of course you can add some other kind of berries and fruit, or chopped nuts to decorate your plate at the end.
So first put all the ingredients  (except the syrop and the blueberries) in a blender. Blend till well combined. You need your batter to be thick.
When it’s done stir the blueberries into the batter.
Heat a non stick pan to medium. Then start putting from the batter in it. Try to do your pancakes small and thick. If not it will be difficult to turn them on. Bake till they are golden brown.
Then serve with the syrup. You can add also nuts and fruits. I personally like them with strawberries or banana.
Blueberrie pancakes are really tasty and as you see there’s no fat. One serving is around 350 kcal which is perfect to start the day.
And of course children love them… well… they’re not like ordinary pancakes! And you can replace the blueberries with some other fruit.
